Over the last seven decades, nutrient density in our food has dropped about as far as it possibly can go before most people eating a Standard American Diet have some sort of chronic condition. That trend is about to change. Over the next few years, nutrient density in our food is going to stop going down and it’s going to start going back up. It will continue rising until it reaches, and possibly exceeds, that of pre-industrial agriculture days (i.e., when all food was nutrient dense and “organic”).
